Carrie's Country Fried Chicken



Carrie's Country Fried Chicken

Enough Boneless Skinless Chicken Breasts to make 10 pieces
1/2 cup salt
1 gallon water

1 cup Flour
1 tsp italian seasoning
1/2 teaspoon garlic salt
pepper to taste
1/2 teaspoon onion powder
1/2 teaspoon red pepper flakes

1 cup milk

oil


Large chicken breasts, cut in 1/2 to make two pieces. If breasts are really thick cut to make pieces about 1/2 inch thick. ( I do this after brined in salt solution)

Dissolve salt in hot water and add enough cold water to make about a gallon of water in large bowl. Add frozen chicken breasts and put in fridge for an hour.  Rinse Well.(see above and cut accordingly)

Add seasoning to flour and stir well, set aside.

Put enough oil in electric skillet to make about a 1/2 inch of oil in pan and heat to about 325 degrees.

Dip cut chicken pieces into milk and coat well then put in flour mixture, coating both sides well. Add pieces to hot oil.

Cook until golden brown turning every 10 minutes for 45-50 minutes.

  2. LOL I will set an extra place setting! I first made this about a year ago and instantly became a family favorite.....one of the few things I have to make on a regular basis or I end up with a cranky family!
