Homade Pasta




Homemade Pasta

2 cups flour
1 tablespoon chopped fresh herbs or 1 teaspoon crushed dried herb
2 eggs
1/4 cup water
1 Tablespoon olive or vegetable oil
2 quarts water lightly salted


Mix flour and herbs together. Make well in center and add egg, water and oil and mix well. Gather dough into ball and knead on floured surface about 5 minutes until smooth and elastic.

Divide dough into 4 equal parts. Roll one part at a time into paper thin rectangles on well floured surface. (keep remaining dough covered) Loosely fold dough lengthwise into thirds. Cut lenthwise into 1/4 inch strips. Unfold and place on towel in single layer or pasta rack to dry for about an hour. If on towel, flip after 30 minutes to dry other side.

Heat  quarts of water to boiling and add pasta. Boil about 5 minutes and drain. Serve by themselves with butter and salt or with a pasta sauce.
