Layered Greens

Inspired from my Garden!

Layered Greens


3 smoked sausage (the hot dog sized ones) sliced in circles
Several cups of Fresh Greens (collards, turnip,mustard,cabbage etc)
2 cups cooked brown rice
4 green onions chopped
1 cup cottage cheese
2 cans (14.5 ounce ones) diced tomato's
1/4 cup heavy cream
White cheese (any type) about 2 cups shredded or 8 slices
1/2 tsp. garlic salt
1 tsp. Italian seasoning
1/2 tsp. red pepper flakes


In bowl pour in cans of diced tomato's, the seasonings and heavy cream. Mix well and ladle enough to coat bottom of a 9 x 13 casserole dish. Generously place a layer of greens, add half the smoked sausage,  half the rice, half the cottage cheese, half green onions and half the cheese. Ladle half the tomato mixture on this and then repeat starting with greens, then onions and sausage, cottage cheese and ladle rest of tomato mix and top with rest of white cheese.

Cover with aluminum foil and bake at 425 degrees for 25 minutes. Serve warm with fresh mustard greens as salad and corn bread.
