- 4 cups all-purpose flour ( do 2 whole
wheat and 2 all purpose)
- 3 cups sugar
- 3 T. Molasses
- 2 teaspoons ground cinnamon
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon nutmeg
- 1 (16 ounce) can solid pack pumpkin
- 1 cup vegetable oil
- 2 eggs
- 2 tablespoons water
- 2 teaspoons vanilla extract
- 2 cups semisweet chocolate chips
- 1 cup chopped walnuts
Directions
In a mixing bowl,
combine flour, sugar, molasses,cinnamon, nutmeg, baking soda and salt. Add pumpkin, oil,
eggs, water and vanilla; beat by hand or with electric mixer until well mixed. Fold in chocolate
chips and nuts. Drop by tablespoonfuls onto greased baking sheets. Bake at 350
degrees F for 10-12 minutes or until edges just begin to brown. Cool on wire rack.
