This is how much I make at one time to feed our family of 5 if and I mean IF any left overs they are saved in fridge for breakfast next morning!
Pancake Mix
6 cups flour
2 Tablespoons sugar
2 teaspoons baking powder
1 teaspoon cinnamon
2 eggs
3/4 cup oil
2 cups milk
2 1/2 to 2 3/4 cups water
Mix all dry ingredients together then add the eggs, oil and milk mixing well. Add water slowly a little at a time stirring in well each time until you have a thick but not too thick pancake batter consistancy! ( I realize this is not too helpful for a beginning cook, but if you cook enough, you do know about how thick a pancake batter should be! So try a little on a hot buttered griddle if it is too thick and having a hard time cooking, just add a little more water!)
You may ask why they water..... most baking I always water down my milk this way and it serves us well. The only things watering milk down don't work well in is things like Quiche, Custards and such! But for most baking use 1/2 the amount of milk and use water for the rest of the portion!)
