Corn Meal Tortillas
3 cups Cornmeal
3 cups boiling water
3 Tablespoons shortening
Stir Cornmeal into boiling water and add shortening. Shape into extremely thin, flat cakes and bake on hot ungreased griddle each side ( about 2 minutes each side)
Note: These can be a little tricky holding shape and need to be made on the small side but delicious with homemade refried beans on them!

mmm that sounds really good. I'll have to try this. Can I use something other than shortening? Would butter or vegetable oil work?
ReplyDeleteI am not sure, I usually make the flour tortilla shells and this was the first time I had tried these. The shortening is what really helps have it hold form though which I do not think veg oil would do. The butter may very well work just as good though!
