Coconut Lunch Cake

4 cups flour
1 cup flaked coconut
2 tsp. baking powder
1 cup sugar
2 tsp. vanilla
2 eggs
2 1/2 cups milk
1/2 cup oil


Mix dry ingredients and then add the liquid ingredients and stir well.

Bake in a greased 13 x 9 pan at 400 degrees for about 30 minutes!

  2. LOL Free! I am glad you liked it! We thought it may be delicous with pineapple or banana added to it as well or even fresh mango pieces added to it!

    It was a hit here in my house too though just the way it is posted.

  3. The only changes I made was 1/2 whole wheat flour. It made the cake very dense...maybe a little too dense. I also made a powdered sugar glaze for the top. It was a hit.
