Chicken Melody with Thai Noodles

Chicken Melody with Thai Noodles

( I got the Wai Wai brand of Thai instant noodles, large packet for 9 servings)

2 chicken boneless skinless breasts cut into 1 inch pieces
2 onions chopped
1 Tb. oil
1 quart button mushrooms sliced
2 stalks celery sliced
1 green pepper diced
1 large package of Thai instant noodles
Juice of half a lime
1 tsp. ground flower pepper
1 tsp. ground sea salt

In electric skillet heat oil and add chicken pieces and onion. Cook stirring frequently until chicken pieces are white and cooked through (about 10 minutes)

In small mixing bowl place everything else in it but the noodles. Stir well to coat with seasonings.

In large bowl place thai noodls and cover with warm water 2 or 3 minutes.

While noodles are soaking pour remaining ingredients that are in mixing bowl, in with chicken mixture and stir well. Stir frequently for about 3 minutes just enough to saute slightly but green pepper and celery should remain crisp to retain as much nutrients as possible.

Drain noodles and place noodles on plates, add chicken mixture on top.
