Spanish Chicken and Rice



Spanish Chicken and Rice


3 cups cooked long grain white rice
2 T. oil
2 boneless skinless chicken breasts cut into 1 inch pieces
1 Green Pepper chopped
2 onions chopped
1 cup baby Lima beans
1 cup broccoli cut into small pieces
1/2 cup salsa
3 T. Taco Seasoning or 1 package
3/4 cup water

Cook Rice according to package directions. While rice is cooking, heat oil in electric skillet and add chicken, green pepper, onion, Lima beans and broccoli. Stir frequently until onions are soft and chicken is cooked thoroughly (about 15 minutes)

Add Taco seasoning, salsa and water, stir well. Add rice and mix in really well, serve hot.
