$2 Dinners


$2 Dinners


The Meals on this page will serve a family of 5 or 6 for total cost of around $2 or less for the entire dinner!

1.)Pancakes

6 Cups White Flour
2 T. Sugar
2 tsp. Baking Powder
1 tsp. Cinnamon
2 eggs
3/4 vegetable oil
2 cups Milk
2 1/4 cup Water

Homemade Syrup

2 cups Sugar
1 cup water
2 T. Molasses
1 tsp. vanilla

Stir sugar with water and molasses in pan, bring to boil. Turn heat down to medium-high and continue boiling about 2 minutes stirring constantly. Remove from heat and stir in vanilla.










2.)Cheesy Broccoli Casserole

3 cups water
1 1/2 cups long grain rice
1 cup frozen broccoli cut up in small pieces
1 tsp. dried onion flakes
garlic salt to taste or 1 tsp. prepared minced garlic
pepper
4 ounces cheddar cheese grated

Butter 9 x 13 casserole pan and set aside. In large 2 qt pan pour in the water and add seasonings, spices and cut up broccoli. Bring to boil, add rice and stir, reduce heat to medium, place lid on pan and let simmer 15 minutes. Remove from heat, and pour this mixture into the buttered 9 x 13 casserole pan. Sprinkle the grated cheese on top, cover with aluminum foil and put in oven at 350 degrees for about 15 minutes.







3.)Campers Chili

2 cans of pork and beans ( bought on sale for no more than 50 cents a can!)
1 jumbo hot dog or 2 regular hot dogs cut in slices.
1/2 cup catsup
1 tsp minced dried onion flakes
1 T. Mustard or spicy brown mustard
1 T. molasses
2 tsp. chili powder
1 tsp onion salt
1 T. vinegar

Add everything together in a pan, stir well and heat stirring now and then on medium high until it starts to bubble. Reduce to medium heat and cook for about 15 minutes. Serve with Homemade Bread. Or Biscuits.


Homemade White Bread
1 package yeast
1 T. Sugar
1 cup warm water
2 1/2 cups flour ( about)

Pour yeast in large bowl and add the sugar. Pour in warm water and stir to dissolve. Add the flour, if dough is really sticky keep stirring in more flour a 1/4 cup at a time until the dough forms a ball without being really sticky. Turn out on floured surface and knead dough for about 5 minutes, working in more flour if necessary. Place dough in a buttered or greased bread pan, turn once to make sure you coat both sides. Cover loosely and set in warm spot to rise about 1 1/2 hours. ( I turn my oven on and place pan at the front of the oven on top of stove where it gets warm when oven is on)
Place bread in oven at 350 degrees, for 10 minutes. Pull out and rub butter over top with fork, covering the whole top of the loaf. Put back in oven for about 20 more minutes. Take out and remove bread from pan on cutting board and serve warm with meal.








4.)Zuccini Spanish Rice
3 cups water
1 1/2 cups long grain white rice
1 can tomato sauce
1 cup frozen zuccini mix vegetables
1 hotdog cut in small pieces
1 tsp. Italian seasoning
1/2 tsp onion salt
2 garlic cloves minced


Add everything but rice and tomato sauce in 2 quart pan and bring to boil. Add rice, stir and cover turn down heat to medium and simmer 15 minutes. Add tomato sauce, stir and replace lid stirring occasionally for about 10 more minutes.

5.) Mac and Cheese with broccoli and hotdog

2 boxes generic mac and cheese
1 cup cut up broccoli
1 jumbo hotdog or 2 regular hotdogs cut in circles

Fill 2 quart pan with water, add broccoli and hotdogs to water, bring to boil. Add mac noodles and boil stirring occasionally for 10 minutes, drain add cheese pouches and a little milk, stir and serve.



6.) Onion Soup

2 onions slices in circles
2 T. Butter
8 cups water
9 beef boullion cubes
2 T. flour

in small pan add 2 cups of the water and add beef boullion cubes and bring to boil. Reduce heat but continue boiling and stirring until cubes are dissolved, set aside.

in 2 quart pan melt butter and add onion rings stirring occasionally until tender and slightly browned. Add the flour and slowly add 6 cups of water stirring constantly and add the beef water as well stirring constantly. Serve with homemade bread.

7.) Baked Potato with sour cream.

Bake potatos, enough for 2 per person and serve with sour cream along with side dishes of homemade bread and green beans or broccoli


8.) Hot Dogs with Tomato Rice
3 Regular Hotdogs sliced up in circles
3 green onions chopped
1 T. Butter
4 leaves fresh basis chopped
6 fresh oregano leaves chopped
3 cups water
1 1/2 cups long grain rice
1 cup chopped broccoli
1 16 ounce can diced tomatos
Soy Sauce
Worcheshire Sauce


Add the 3 cups water in a 2 quart pan, add chopped broccoli and bring to boil. Add Rice, stir, cover with lid and reduce heat to medium and cook for about 15 to 20 minutes.

In the meantime in electric skillet add the butter, hotdogs, and onions and turn on 300 degrees to brown. When browned add can of tomatos, stir and let cook about 5 minutes. Add rice along with Soy and Worcheshire Sauces, stirring in well and serve hot.

9.) Dilled Pasta and Spaghetti Sauce

Pasta:

2 cups flour
1/2 tsp. salt
2 eggs
3 T. Dill pickle juice
Water
1 T. oil

Mix flour and salt together then create a well in the center. Place 3 T. dill pickle juice in measuring cup then add enough water to make 1/4 cup and add the flour along with eggs and oil and mix well. Gather in a ball and knead for 5 minutes on a well floured surface until smooth and elastic. Divide into 4 equal balls and take one ball at a time and roll it out paper thin rectangle while you keep the other balls covered. Take the rectangle and fold into loosely into thirds and cut into 1/4 inch strips, laying out on a towel to dry, do the same with the other 3 balls. Let dry for an hour, turning once after 30 minutes.  When dry place into 2 quarts of boiling water for about 8 minutes. Drain.
Serve with heated spaghettie sauce ( bought on sale)

10.) Cold Tuna Pasta

1 lb box of Rotini ( spiral ) Pasta    ( bought on sale for 79 cents)
2 small tomatos chopped   ( bought on sale for 33 cents a tomato)
3 green onions chopped     ( bought for 59 cents a bundle with about 8 in the bundle)
1 can tuna drained             ( bought on sale for 2 cans for a dollar)
1/4 cup   Olive Oil Sun Dried Tomato Vinegrette Dressing.

Cook pasta according to package directions, drain , rinse with cold water and add drained pasta to large bowl.  Add rest of ingredients, stir well, cover and chill in fridge for several hours to get cold before serving.

    1. Yes, when meat is not the main course and is used more as a flavoring added to stir fry's, chilis, mac and cheese or other food combinations, a little meat goes a long ways. 2 hotdogs is more than enough for use as a flavoring for a dish. Now granted this list is not a list of what we eat all the time but we do have these meals on occasions..... we eat other sources of protein as well.
