Black Bean Open Faced Burgers with Sauteed Onions

Okay I made 3 loaves of homemade white bread, I keep this real simple and put one loaf up for later use, 2 were used at dinner ( did I mention I have a half starved 14 year old boy?)
 
White Bread
 
2 to 2 1/4 cups warm water
2 Tablespoons of yeast
1 Tablespoon sugar
 
Mix these together then add
 
6 cups of flour
 
Stir well, should be stiff, roll into a ball and not too sticky
 
Knead on floured surface about 5 minutes
 
Divide into 3 balls and roll (on non floured surface) into the shape of a bread loaf.
 
Place in buttered bread pans, turning to coat, if it does not coat well, go ahead and smear a little more butter across the tops and ends. Then cover with wet towel and place somewhere warm for about an hour. ( I do this on my stove and have stove turned on to 300 degrees)
 
Place in oven at 350 degrees and bake for 30 minutes. Last 10 minutes of baking spread butter over the tops.
 
Take out of pans and cool on cutting board or rack.
 
 
Black Bean Burgers
 
2 cups dried black beans
8 cups of water
1 onion chopped
1 tsp of prepared minced garlic, garlic powder, garlic salt or 2 cloves fresh and minced
salt and pepper
20 crackers crushed
2 cups oats
2 large onions peeled and sliced in circles for sauteed onions
 
In 2 Quart pan place beans and water and bring to boil. Take off burner and let sit for 1 hour then return to heat and gently boil for 2 hours. Drain liquid out.
 
In blender put about 2 cups of beans at a time and blend. The first batch add the onions. Depending on strength of blender you may have to add a little water so it blends well , around 1/8 of a cup.
 
In large bowl place blended beans and onions and add rest of ingredients mixing well. Let sit 5 to 10 minutes.
 
While burgers cook saute onions in pan on stove in a tablespoon or 2 of butter stirring frequently.
 
 
To serve, cut bread in slices and spread with what ever condiments you like, place burger on it and add sauteed onions on top.
 
We had sliced tomato's from garden but these are not necessary.
 
Heat large griddle with light coating of butter or oil and fry on each side about 10 minutes.

  2. Those look good. Do you ever make meatballs with beans? Laurel's kitchen calls them "neatballs" I make those quite a bit. They're pretty good with pasta or sweet and sour sauce.
