Oatmeal-Carrot Spice Muffins

 
 
This is a Double Recipe to fill 2    13 x 9 pans
 
 
 
2 cups old fashioned oats
4 cups flour
2 tsp. baking powder
1 T. Cinnamon
1/2 tsp. nutmeg
1/2 tsp. ground cloves
1 1/2 cups sugar
2 carrots shredded
 
Mix all these ingredients well then add:
 
1 stick or 1/2 cup melted butter
1/4 cup molasses
1 cup milk
3 cups water
 
Mix well and then pour into 2 buttered 13 x 9 pans. Bake at 350 for approx 25 minutes
 
This is NOT a very sweet muffin, as we do not like them too sweet so you may want to and more sugar, if you do not have molasses, just omit it from recipe.
 
Best served after they have had time to cool and sit for at least 4 hours.
